"Pet Nat" (aka. pétillant naturel) or Ancestral Method is the first style of sparkling ever made and works by bottling wine that is only partially (and ongoing) fermented, which leads to the trapping of CO2 and carbonation. It is unfiltered and very complex. Using 100% Geisenheim grapes, a popular varietal of the East Coast.
